Description

  • 4 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 2 tablespoons butter

  • 3 cloves garlic, minced

  • 1/2 cup chicken broth

  • 1/4 cup fresh lemon juice (about 2 lemons)

  • 1 tablespoon lemon zest

  • 1 teaspoon honey (optional, for sweetness)

  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)

  • Salt and pepper to taste

  • Fresh parsley for garnish (optional)


Instructions

  • Prepare the Chicken:

    • Season both sides of the chicken breasts with salt and pepper.

  • Cook the Chicken:

    • In a large skillet, heat the olive oil and butter over medium-high heat.

    • Add the chicken breasts and cook for 5-6 minutes on each side, or until golden brown and cooked through. The internal temperature should reach 165°F (75°C). Once cooked, remove the chicken from the skillet and set aside.

  • Make the Lemon Sauce:

    • In the same skillet, add the minced garlic and cook for 30 seconds, or until fragrant.

    • Pour in the chicken broth, lemon juice, lemon zest, and honey (if using). Stir to combine, scraping up any browned bits from the bottom of the pan.

    • Bring the sauce to a simmer, cooking for 2-3 minutes to allow the flavors to meld and the sauce to thicken slightly.

 

  • Combine and Serve:

    • Return the cooked chicken to the skillet, spooning some of the sauce over the chicken. Let it simmer in the sauce for 2-3 minutes, allowing the flavors to infuse.

    • Garnish with fresh parsley and serve immediately with your choice of side dishes, such as rice, vegetables, or mashed potatoes.

Notes

  • If you prefer a richer sauce, you can add 1/4 cup of heavy cream to the sauce while simmering.

  • For a more intense lemon flavor, increase the lemon juice and zest.

  • This dish pairs wonderfully with a fresh green salad or roasted potatoes.
