Ingredients
-
4 boneless, skinless chicken breasts
-
2 tablespoons olive oil
-
2 tablespoons butter
-
3 cloves garlic, minced
-
1/2 cup chicken broth
-
1/4 cup fresh lemon juice (about 2 lemons)
-
1 tablespoon lemon zest
-
1 teaspoon honey (optional, for sweetness)
-
1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
-
Salt and pepper to taste
-
Fresh parsley for garnish (optional)
Instructions
-
Prepare the Chicken:
-
Season both sides of the chicken breasts with salt and pepper.
-
-
Cook the Chicken:
-
In a large skillet, heat the olive oil and butter over medium-high heat.
-
Add the chicken breasts and cook for 5-6 minutes on each side, or until golden brown and cooked through. The internal temperature should reach 165°F (75°C). Once cooked, remove the chicken from the skillet and set aside.
-
-
Make the Lemon Sauce:
-
In the same skillet, add the minced garlic and cook for 30 seconds, or until fragrant.
-
Pour in the chicken broth, lemon juice, lemon zest, and honey (if using). Stir to combine, scraping up any browned bits from the bottom of the pan.
-
Bring the sauce to a simmer, cooking for 2-3 minutes to allow the flavors to meld and the sauce to thicken slightly.
-
-
Combine and Serve:
-
Return the cooked chicken to the skillet, spooning some of the sauce over the chicken. Let it simmer in the sauce for 2-3 minutes, allowing the flavors to infuse.
-
Garnish with fresh parsley and serve immediately with your choice of side dishes, such as rice, vegetables, or mashed potatoes.
-
Notes
-
If you prefer a richer sauce, you can add 1/4 cup of heavy cream to the sauce while simmering.
-
For a more intense lemon flavor, increase the lemon juice and zest.
-
This dish pairs wonderfully with a fresh green salad or roasted potatoes.
-
You can use bone-in chicken thighs for a more flavorful alternative to chicken breasts.
