- 4 chicken breasts
- 1/4 cup soy sauce
- 1/4 cup olive oil
- 1/4 cup white vinegar
- 2 tbsp brown sugar
- 2 tbsp thyme
- 1 tbsp ground allspice
- 1 tbsp ground cinnamon
- 1 tbsp cayenne pepper
- 1 tbsp black pepper
- 1 tbsp garlic powder
- 1 tbsp ginger powder
Instructions
- In a bowl, whisk together the soy sauce, olive oil, white vinegar, brown sugar, thyme, allspice, cinnamon, cayenne pepper, black pepper, garlic powder, and ginger powder to create the marinade.
- Place the chicken breasts in a large resealable plastic bag or shallow dish.
- Pour the marinade over the chicken, making sure it is well coated.
- Seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight for the best flavor.
- Preheat the grill to medium-high heat or the oven to 375°F (190°C).
- Grill the chicken for 6-7 minutes per side or bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C).
- Serve hot and enjoy with your favorite sides.
Notes
- If you prefer a spicier kick, you can increase the amount of cayenne pepper or add chopped scotch bonnet peppers to the marinade.
- You can also use chicken thighs or drumsticks for a juicier result.
- For added flavor, baste the chicken with the leftover marinade while grilling or baking (be sure to discard any leftover marinade that has touched raw chicken).
