Ingredients

  • 4 chicken breasts
  • 1/4 cup soy sauce
  • 1/4 cup olive oil
  • 1/4 cup white vinegar
  • 2 tbsp brown sugar
  • 2 tbsp thyme
  • 1 tbsp ground allspice
  • 1 tbsp ground cinnamon
  • 1 tbsp cayenne pepper
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp ginger powder

Instructions

  • In a bowl, whisk together the soy sauce, olive oil, white vinegar, brown sugar, thyme, allspice, cinnamon, cayenne pepper, black pepper, garlic powder, and ginger powder to create the marinade.
  • Place the chicken breasts in a large resealable plastic bag or shallow dish.
  • Pour the marinade over the chicken, making sure it is well coated.
  • Seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight for the best flavor.
  • Preheat the grill to medium-high heat or the oven to 375°F (190°C).
  • Grill the chicken for 6-7 minutes per side or bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C).
  • Serve hot and enjoy with your favorite sides.

Notes

  • If you prefer a spicier kick, you can increase the amount of cayenne pepper or add chopped scotch bonnet peppers to the marinade.
  • You can also use chicken thighs or drumsticks for a juicier result.
  • For added flavor, baste the chicken with the leftover marinade while grilling or baking (be sure to discard any leftover marinade that has touched raw chicken).
