  • 8 oz spaghetti
  • 2 tbsp olive oil
  • 1 lb Italian sausage
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup white wine
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Cook the spaghetti according to package instructions. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through.
  • Add the sliced red and yellow bell peppers, onion, and garlic to the skillet. Cook for 5-7 minutes, until the vegetables are tender.
  • Pour in the chicken broth and white wine, scraping up any browned bits from the bottom of the pan. Bring to a simmer and let cook for 3-4 minutes.
  • Stir in the heavy cream and grated Parmesan cheese, and cook until the sauce thickens, about 3 minutes.
  • Season with salt and pepper to taste.
  • Add the cooked spaghetti to the skillet and toss until the noodles are well coated with the sauce.
  • Garnish with fresh parsley and serve.

Notes

  • For a spicier version, you can use hot Italian sausage or add red pepper flakes to the sauce.
  • If you prefer a lighter sauce, you can use half-and-half instead of heavy cream.
