- 8 oz spaghetti
- 2 tbsp olive oil
- 1 lb Italian sausage
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup white wine
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the spaghetti according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through.
- Add the sliced red and yellow bell peppers, onion, and garlic to the skillet. Cook for 5-7 minutes, until the vegetables are tender.
- Pour in the chicken broth and white wine, scraping up any browned bits from the bottom of the pan. Bring to a simmer and let cook for 3-4 minutes.
- Stir in the heavy cream and grated Parmesan cheese, and cook until the sauce thickens, about 3 minutes.
- Season with salt and pepper to taste.
- Add the cooked spaghetti to the skillet and toss until the noodles are well coated with the sauce.
- Garnish with fresh parsley and serve.

- For a spicier version, you can use hot Italian sausage or add red pepper flakes to the sauce.
- If you prefer a lighter sauce, you can use half-and-half instead of heavy cream.
