Description

Ingredients

  • 2 lbs beef stew meat, cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 1 can diced tomatoes
  • 4 cups beef broth
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  • In a large pot, heat olive oil over medium heat.
  • Add the beef stew meat and brown on all sides.
  • Add the onion and garlic, sauté until fragrant.
  • Stir in the carrots, potatoes, diced tomatoes, beef broth, thyme, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 1-2 hours, or until beef is tender.

Notes
