  • 4 boneless, skinless chicken breasts

  • 1 cup salsa verde (store-bought or homemade)

  • 1 cup shredded pepper jack cheese

  • 1 tbsp olive oil

  • 1 tsp ground cumin

  • 1 tsp chili powder

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt and pepper to taste

  • 1 tbsp fresh cilantro, chopped (optional, for garnish)

  • Lime wedges (optional, for serving)


Instructions

  • Prepare the Chicken:

    • Preheat the grill to medium-high heat (about 400°F or 200°C).

    • Rub the chicken breasts with olive oil and season both sides with cumin, chili powder, garlic powder, onion powder, salt, and pepper.

  • Grill the Chicken:

    • Place the chicken breasts on the preheated grill and cook for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is fully cooked through.

    • During the last 2 minutes of cooking, spoon about 2 tablespoons of salsa verde onto each chicken breast. Let it heat through while the chicken finishes cooking.

  • Melt the Cheese:

    • Sprinkle the shredded pepper jack cheese over the salsa-covered chicken breasts during the last minute of grilling. Close the grill lid to melt the cheese, or move the chicken to a cooler part of the grill if necessary.

  • Serve:

    • Remove the chicken from the grill and let it rest for 3-5 minutes.

    • Garnish with fresh cilantro and serve with lime wedges on the side for an extra burst of flavor.

 

  • Optional:

    • Serve your grilled salsa verde pepper jack chicken with your favorite sides, such as Mexican rice, grilled vegetables, or a fresh salad.

Notes

  • If you prefer more heat, you can add sliced jalapeños or a drizzle of hot sauce on top of the salsa verde before adding the cheese.
