Ingredients
-
2 cups cooked, shredded chicken (rotisserie or cooked chicken breast)
-
1 cup shredded cheese (cheddar or a mix of your choice)
-
1/2 cup cream cheese, softened
-
1/4 cup green onions, chopped
-
1/2 tsp garlic powder
-
1/2 tsp onion powder
-
1/2 tsp cumin
-
1/4 tsp chili powder
-
Salt and pepper to taste
-
10–12 gluten-free tortillas (corn tortillas work well)
-
Olive oil or cooking spray for brushing
Instructions
-
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
-
In a bowl, mix the cooked shredded chicken, cheese, cream cheese, green onions, garlic powder, onion powder, cumin, chili powder, salt, and pepper until well combined.
-
Warm the gluten-free tortillas in the microwave for about 15-20 seconds to make them easier to roll.
-
Spoon about 2-3 tablespoons of the chicken mixture onto the center of each tortilla.
-
Roll the tortillas tightly around the filling, ensuring the seam is on the bottom.
-
Place the taquitos on the prepared baking sheet, seam side down, and lightly spray or brush with olive oil.
-
Bake for 15-20 minutes or until the taquitos are golden and crispy.
-
Serve hot with salsa, guacamole, or a dipping sauce of your choice!
Notes
-
If you prefer a spicier kick, you can add chopped jalapeños or a dash of hot sauce to the chicken mixture.
-
For a dairy-free version, substitute the cheese and cream cheese with plant-based alternatives.
-
Make sure to use gluten-free tortillas, as not all tortillas are gluten-free.
