These Easy Gluten-Free Chicken Taquitos are crispy, flavorful, and the perfect snack or meal for anyone on a gluten-free diet. Packed with seasoned chicken and wrapped in a gluten-free tortilla, these taquitos are baked to golden perfection. Serve them with salsa, guacamole, or your favorite dipping sauce for an easy, crowd-pleasing dish!

  • 2 cups cooked, shredded chicken (rotisserie or cooked chicken breast)

  • 1 cup shredded cheese (cheddar or a mix of your choice)

  • 1/2 cup cream cheese, softened

  • 1/4 cup green onions, chopped

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp cumin

  • 1/4 tsp chili powder

  • Salt and pepper to taste

  • 1012 gluten-free tortillas (corn tortillas work well)

  • Olive oil or cooking spray for brushing


Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.

  • In a bowl, mix the cooked shredded chicken, cheese, cream cheese, green onions, garlic powder, onion powder, cumin, chili powder, salt, and pepper until well combined.

  • Warm the gluten-free tortillas in the microwave for about 15-20 seconds to make them easier to roll.

  • Spoon about 2-3 tablespoons of the chicken mixture onto the center of each tortilla.

  • Roll the tortillas tightly around the filling, ensuring the seam is on the bottom.

  • Place the taquitos on the prepared baking sheet, seam side down, and lightly spray or brush with olive oil.

  • Bake for 15-20 minutes or until the taquitos are golden and crispy.

 

  • Serve hot with salsa, guacamole, or a dipping sauce of your choice!

Notes

  • If you prefer a spicier kick, you can add chopped jalapeños or a dash of hot sauce to the chicken mixture.

  • For a dairy-free version, substitute the cheese and cream cheese with plant-based alternatives.
