Description

This Crockpot Italian Meatball Soup is an easy and delicious meal that’s perfect for a cozy night in.   • Frozen or homemade meatballs (about 20-30 small meatballs)
  • 1 can diced tomatoes
  • 2 tablespoons tomato paste
  • 4 cups beef or chicken broth
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 1 zucchini, diced
  • 1 tablespoon Italian seasoning
  • 3 garlic cloves, minced
  • Salt and pepper to taste
  • Fresh spinach or kale (optional, added at the end)
  • Grated Parmesan cheese for garnish

 

  • Optional: cooked pasta or rice (for serving)

Instructions

  • Prepare the Soup Base: In the crockpot, combine the diced tomatoes, tomato paste, beef or chicken broth, carrots, celery, onion, zucchini, Italian seasoning, and minced garlic. Stir to combine.
  • Add the Meatballs: Drop in the frozen or homemade meatballs. Season with salt and pepper to taste.
  • Cook in the Crockpot: Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the vegetables are tender and the meatballs are heated through.
  • Finish the Soup: About 15 minutes before serving, stir in fresh spinach or kale (if using) and let it wilt into the soup.

 

  • Serve: Ladle the soup into bowls and garnish with grated Parmesan cheese. If desired, serve with cooked pasta or rice on the side or directly in the soup for extra heartiness.

Notes

  • You can use frozen or homemade meatballs for this recipe. If using homemade, make sure they are fully cooked before adding to the crockpot.
  • For a thicker soup, add a bit more tomato paste or reduce the amount of broth.
