- 1 lb smoked sausage, sliced
- 12 oz penne pasta
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup shredded mozzarella cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the sliced smoked sausage to the skillet and cook until browned, about 4-5 minutes. Remove the sausage from the skillet and set aside.
- In the same skillet, add the diced onion and cook until softened, about 2-3 minutes.
- Add the minced garlic and cook for another 30 seconds, until fragrant.
- Pour in the chicken broth and bring it to a simmer. Let it cook for 2-3 minutes to reduce slightly.
- Stir in the heavy cream, mozzarella cheese, Italian seasoning, and paprika. Cook until the cheese has melted and the sauce is smooth, about 2-3 minutes.
- Return the cooked sausage to the skillet and stir to combine.
- Add the cooked penne pasta to the skillet and toss to coat in the creamy sauce.
- Season with salt and pepper to taste.
- Serve the pasta topped with fresh parsley for garnish.
Notes
- For a little extra flavor, you can add a pinch of red pepper flakes for heat.
- If you prefer a lighter version, you can substitute half-and-half for the heavy cream, though it will be slightly less rich.
