Ingredients
-
2 tablespoons olive oil
-
4 chicken sausages (sliced)
-
1 medium onion (diced)
-
2 cloves garlic (minced)
-
1 cup orzo pasta
-
2 cups chicken broth (low-sodium)
-
1/2 cup heavy cream
-
1/2 cup grated Parmesan cheese
-
1 teaspoon dried thyme
-
Salt and pepper, to taste
-
Fresh parsley (for garnish)
Instructions
-
Heat olive oil in a large skillet over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.
-
In the same skillet, add the diced onion and cook until softened, about 3 minutes. Add the minced garlic and cook for an additional 30 seconds.
-
Add the orzo pasta to the skillet and stir to combine with the onions and garlic. Toast the orzo for 1-2 minutes.
-
Pour in the chicken broth and bring to a simmer. Cover the skillet and let the orzo cook for about 10-12 minutes, stirring occasionally, until most of the liquid has absorbed.
-
Stir in the heavy cream, Parmesan cheese, and cooked sausage. Season with dried thyme, salt, and pepper. Stir until the sauce is creamy and everything is well combined.
-
Simmer for an additional 2-3 minutes until the sauce thickens and the dish is heated through.
-
Garnish with fresh parsley before serving.
Notes
You can use spicy chicken sausage for a little extra kick!
For a lighter version, replace heavy cream with half-and-half or use a plant-based alternative.
Add some spinach or kale in the last 2 minutes of cooking for extra veggies.
