  • 3 cups cooked, shredded chicken (rotisserie chicken works great)

  • 1 can (10.5 oz) cream of chicken soup (or gluten-free alternative)

  • 1/2 cup sour cream

  • 1 cup shredded cheddar cheese

  • 1 cup frozen peas (or your favorite vegetable)

  • 1/2 cup milk (or dairy-free alternative)

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • Salt and pepper to taste

  • 2 cups cooked pasta (egg noodles or gluten-free pasta)

  • 1/2 cup breadcrumbs (optional, for topping)

  • 2 tablespoons butter (for greasing the casserole dish)


Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9×13-inch casserole dish with butter.

  • In a large mixing bowl, combine the cooked chicken, cream of chicken soup, sour cream, shredded cheddar cheese, peas, milk, garlic powder, onion powder, salt, and pepper. Stir until well combined.

  • Add the cooked pasta to the chicken mixture and mix until everything is evenly coated.

  • Transfer the mixture to the prepared casserole dish, spreading it out evenly.

  • If desired, sprinkle breadcrumbs over the top for a crunchy, golden finish.

  • Bake for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.

Notes

You can use a gluten-free pasta if needed to make the dish gluten-free.

Feel free to customize the veggies – broccoli, carrots, or corn also work well in this casserole.

For an extra cheesy casserole, sprinkle some more shredded cheese on top before baking.
