- 2 ripe avocados, pitted and peeled
- 1/2 cup fresh basil leaves
- 2 cloves garlic
- 1/4 cup pine nuts
- 2 tbsp lemon juice
- 1/3 cup olive oil
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- Cook spaghetti according to package instructions. Drain and set aside.
- In a food processor, combine avocados, basil, garlic, pine nuts, and lemon juice. Pulse until smooth.
- With the food processor running, slowly drizzle in olive oil until well combined. Season with salt and pepper.
- Toss the avocado sauce with cooked spaghetti until well coated.
- Serve with grated Parmesan cheese on top, if desired.
