Ingredients

  • 8 oz spaghetti
  • 2 ripe avocados, pitted and peeled
  • 1/2 cup fresh basil leaves
  • 2 cloves garlic
  • 1/4 cup pine nuts
  • 2 tbsp lemon juice
  • 1/3 cup olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  • Cook spaghetti according to package instructions. Drain and set aside.
  • In a food processor, combine avocados, basil, garlic, pine nuts, and lemon juice. Pulse until smooth.
  • With the food processor running, slowly drizzle in olive oil until well combined. Season with salt and pepper.
