Description

This Chicken Hashbrown Casserole is a comforting, all-in-one meal packed with tender chicken, crispy hashbrowns, mixed vegetables, and creamy cheese. Topped with a buttery Ritz cracker crust, it’s the perfect casserole to satisfy your hunger and warm your soul!

For the Casserole:

  • 3 cups frozen hash browns, thawed slightly (about 8 ounces)
  • 23 cups cooked chicken, diced
  • ¼ cup bacon bits
  • 1 cup shredded cheddar cheese
  • 1 (10.5-ounce) can condensed cream of chicken soup
  • ½ cup milk
  • 12 ounces frozen mixed vegetables, thawed slightly
  • ⅛ teaspoon dried thyme

For the Topping:

 

  • 1214 Ritz crackers (about half a sleeve), crushed
  • ½ cup shredded cheddar cheese

Instructions

  • Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  • Prepare the Casserole Mixture:

    • In a large bowl, combine the thawed hash browns, cooked chicken, bacon bits, shredded cheddar cheese, cream of chicken soup, milk, thawed mixed vegetables, and dried thyme.
    • Stir until everything is evenly mixed.
  • Assemble the Casserole:

    • Pour the mixture into the prepared baking dish and spread it evenly.
  • Prepare the Topping:

    • In a small bowl, crush the Ritz crackers into fine crumbs.
    • Sprinkle the crushed crackers evenly over the casserole. Then, sprinkle the shredded cheddar cheese on top of the crackers.
  • Bake the Casserole:

    • Cover the baking dish with aluminum foil and bake in the preheated oven for 35-40 minutes.
    • After 35-40 minutes, remove the foil and continue baking for an additional 10 minutes, or until the casserole is hot, bubbly, and the topping is golden brown.

 

  • Serve:

    • Allow the casserole to cool for a few minutes before serving. Enjoy!

Notes

  • You can use leftover chicken or rotisserie chicken for this recipe to make it even quicker.
  • If you prefer a creamier texture, you can add a little sour cream to the mixture.
