For the Salisbury Steaks:
- 1 lb ground beef (80% lean)
- ½ cup panko breadcrumbs
- 2 tbsp tomato sauce or ketchup
- 1 large egg
- 1 tsp yellow mustard
- 1 tbsp Worcestershire sauce
- 1 tsp dried oregano
- ½ tsp ground black pepper
- ½ tsp salt
For the Mushroom Gravy:
- 2 tbsp vegetable oil (for frying the steaks)
- 1 medium onion, sliced
- 8 oz button mushrooms, sliced
- 2 cups low-sodium beef broth
- ½ tsp onion powder
- ½ tsp garlic powder
- 1 tbsp Worcestershire sauce
- 2 tsp cornstarch mixed with 2 tsp water (slurry)
- Salt and pepper to taste

Prepare the Salisbury Steaks:
- In a large bowl, combine the ground beef, panko breadcrumbs, tomato sauce (or ketchup), egg, yellow mustard, Worcestershire sauce, dried oregano, ground black pepper, and salt.
- Mix everything together until well combined.
- Divide the mixture into 4 equal portions and shape each portion into an oval or round patty.

Cook the Steaks:
- Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat.
- Once the oil is hot, add the beef patties to the skillet and cook for 3-4 minutes per side, or until the patties are browned and cooked through.
- Remove the steaks from the skillet and set them aside on a plate.

Make the Mushroom Gravy:
- In the same skillet, add the sliced onions and cook for 3-4 minutes, until softened.
- Add the sliced mushrooms and cook for an additional 5-7 minutes, or until the mushrooms are browned and softened.
- Pour in the beef broth, onion powder, garlic powder, and Worcestershire sauce, stirring to combine.
- Bring the mixture to a simmer and cook for 5 minutes.

Thicken the Gravy:
- Stir the cornstarch and water slurry into the gravy and continue simmering for 2-3 minutes, until the gravy thickens.
- Season with salt and pepper to taste.

- Return the Salisbury steaks to the skillet and spoon some of the gravy over the top.
- Let the steaks simmer in the gravy for an additional 5 minutes to heat through.
- Serve the Salisbury steaks with the mushroom gravy over mashed potatoes, rice, or vegetables.
Notes
- You can substitute the button mushrooms with other types of mushrooms like cremini or shiitake for a different flavor profile.
- If you prefer a thicker gravy, simply add more cornstarch slurry until you reach your desired consistency.
