Ingredients
For the Garlic Mayonnaise:

¼ cup mayonnaise

2 minced garlic cloves

½ teaspoon onion powder

1 teaspoon Italian seasoning

½ teaspoon garlic powder (optional)

For the Parmesan Coating:

1 cup fresh grated parmesan cheese

½ cup panko breadcrumbs
For the Chicken:

2 large boneless and skinless chicken breasts, sliced horizontally to make 4 fillets

1 tablespoon fresh oregano or parsley leaves, to garnish
Instructions

Prepare the Garlic Mayonnaise:
In a small bowl, combine the mayonnaise, minced garlic, onion powder, Italian seasoning, garlic powder (if using), and salt. Mix well and set aside. -
Prepare the Parmesan Coating:
In a shallow bowl, combine the grated parmesan cheese and panko breadcrumbs. Mix until evenly distributed. -
Prepare the Chicken:
Slice the chicken breasts horizontally to create 4 fillets. Pat them dry with a paper towel to ensure the coating sticks better. -
Coat the Chicken:
Spread a thin layer of the garlic mayonnaise mixture over each chicken fillet. Then, press the chicken into the parmesan and breadcrumb mixture, coating both sides thoroughly. -
Air Fry the Chicken:
Preheat your air fryer to 375°F (190°C). Arrange the chicken fillets in a single layer in the air fryer basket, leaving space between each fillet. Air fry for 10-12 minutes, flipping halfway through, until the chicken is golden brown and crispy, and the internal temperature reaches 165°F (74°C).

Once done, remove the chicken from the air fryer and garnish with fresh oregano or parsley leaves. Serve immediately with your favorite side dishes.
Notes
You can adjust the seasoning to your liking. Adding some red pepper flakes can give the dish a slight kick.
For a lighter version, you can use reduced-fat mayonnaise.
