Ingredients
Scale
- 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes (optional)
- Salt and pepper, to taste
- Skewers (wooden or metal)
Instructions
- Marinate the chicken: In a medium bowl, combine olive oil, minced garlic, Parmesan cheese, parsley, lemon juice, oregano, red pepper flakes (if using), salt, and pepper. Stir to combine.
- Prepare the chicken: Add the cubed chicken to the marinade and toss to coat evenly. Cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).
- Assemble the skewers: Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.
- Air fry the chicken: Preheat the air fryer to 375°F (190°C). Lightly spray the air fryer basket with cooking spray to prevent sticking. Place the skewers in the basket and air fry for 10-12 minutes, flipping halfway through, until the chicken is cooked through (internal temperature should reach 165°F/74°C).
- Serve: Once cooked, remove the skewers from the air fryer and garnish with additional chopped parsley and Parmesan cheese if desired. Serve hot with your favorite dipping sauce or as a main dish with a side salad or vegetables.
Notes
- To make this dish even more flavorful, add a drizzle of extra virgin olive oil or a squeeze of fresh lemon juice right before serving.
- If you prefer a smoky flavor, you can add a small amount of smoked paprika to the marinade.
- Wooden skewers should be soaked in water for at least 30 minutes before using to prevent burning.
