- 8 oz noodles (any kind you prefer, such as rice noodles, soba, or spaghetti)
- 1 block firm tofu (pressed and cubed)
- 1 tablespoon vegetable oil (for frying tofu)
- 2 tablespoons chili sauce (adjust based on desired heat level)
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon garlic (minced)
- 1 teaspoon ginger (minced)
- Optional: 1/2 cup sliced bell peppers, carrots, or any veggies you like
- Optional: Green onions (for garnish)
- Optional: Sesame seeds (for garnish)
Instructions
- Cook the noodles according to package instructions, then drain and set aside.
- While the noodles cook, heat the vegetable oil in a pan over medium-high heat.
- Add the cubed tofu to the pan and cook until crispy and golden on all sides (about 5-7 minutes). Remove the tofu from the pan and set aside.
- In the same pan, add the garlic and ginger, cooking for 1 minute until fragrant.
- Stir in the chili sauce, soy sauce, and sesame oil, letting it simmer for 2 minutes to combine the flavors.
- Add the cooked noodles to the sauce, tossing to coat evenly.
- Add the crispy tofu and any optional veggies you desire, tossing everything together.
- Serve hot, garnished with green onions and sesame seeds if desired.
Notes
- Feel free to adjust the spice level by adding more or less chili sauce.
- You can swap the tofu for tempeh or another plant-based protein.
- Customize with your favorite vegetables—zucchini, mushrooms, or spinach would work great!
