  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar

  • 1 egg yolk
  • 23 tablespoons cold water (as needed)

  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup fresh lemon juice (about 3 lemons)
  • Zest of 2 lemons
  • 1/2 cup heavy cream
  • 1/4 teaspoon salt

For garnish:

  • Fresh berries (optional)
  • Whipped cream (optional)
  • Powdered sugar (optional)

Instructions

  • Prepare the Crust:
    Preheat your oven to 350°F (175°C). In a food processor, combine the flour and powdered sugar. Add the cold cubed butter and pulse until the mixture resembles coarse crumbs. Add the egg yolk and pulse until combined. Slowly add cold water, 1 tablespoon at a time, until the dough starts to come together. Press the dough into a tart pan, covering the bottom and sides evenly. Use a fork to prick the bottom of the crust. Bake for 15-20 minutes or until the crust is lightly golden. Remove from the oven and let cool.
  • Make the Lemon Filling:
    In a medium bowl, whisk together the sugar, eggs, lemon juice, lemon zest, heavy cream, and salt until smooth and well combined.
  • Bake the Tart:
    Once the crust has cooled, pour the lemon filling into the crust. Bake for 20-25 minutes, or until the filling is set but still slightly jiggly in the center. Let the tart cool to room temperature, then refrigerate for at least 2 hours or until completely chilled.
  • Serve and Garnish:
    Before serving, dust the tart with powdered sugar, and optionally garnish with fresh berries and whipped cream for a beautiful presentation. Slice and enjoy the bright, tangy flavors of this perfect Valentine’s Day treat!
