Description

This quick and easy Red Velvet Mug Cake is the perfect way to surprise your sweetheart on Valentine’s Day! Ready in just 5 minutes, this single-serving treat combines the rich, velvety texture of classic red velvet cake with a creamy cream cheese frosting, all in a microwaveable mug. No oven required!

Ingredients

Scale
  • 4 tablespoons all-purpose flour
  • 3 tablespoons sugar
  • 1 tablespoon unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • 3 tablespoons milk
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • Optional: 1/4 teaspoon white vinegar (for a fluffier texture)

For Frosting:

  • 2 tablespoons cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1/4 teaspoon vanilla extract

Instructions

  • In a microwave-safe mug, whisk together the flour, sugar, cocoa powder, baking powder, and salt.
  • Add the milk, vegetable oil, vanilla extract, red food coloring, and vinegar (if using). Mix until smooth and combined.
  • Microwave the mug on high for 1 minute and 30 seconds. Keep an eye on it to prevent it from overflowing. The cake should rise and be slightly moist in the center.
  • While the cake is cooling slightly, make the frosting: In a small bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth.
  • Once the mug cake has cooled a bit, top it with the cream cheese frosting and enjoy!

Notes

  • For a more indulgent version, you can add chocolate chips or a few raspberries to the batter before microwaving.
  • Adjust the microwave time based on the wattage of your microwave. If it’s a lower-watt microwave, you may need to add an extra 30 seconds.
