Ingredients
Scale
- 4 tablespoons all-purpose flour
- 3 tablespoons sugar
- 1 tablespoon unsweetened cocoa powder
- 1/4 teaspoon baking powder
- Pinch of salt
- 3 tablespoons milk
- 2 tablespoons vegetable oil
- 1/2 teaspoon vanilla extract
- 1 tablespoon red food coloring
- Optional: 1/4 teaspoon white vinegar (for a fluffier texture)
For Frosting:
- 2 tablespoons cream cheese, softened
- 2 tablespoons powdered sugar
- 1/4 teaspoon vanilla extract
Instructions
- In a microwave-safe mug, whisk together the flour, sugar, cocoa powder, baking powder, and salt.
- Add the milk, vegetable oil, vanilla extract, red food coloring, and vinegar (if using). Mix until smooth and combined.
- Microwave the mug on high for 1 minute and 30 seconds. Keep an eye on it to prevent it from overflowing. The cake should rise and be slightly moist in the center.
- While the cake is cooling slightly, make the frosting: In a small bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth.
- Once the mug cake has cooled a bit, top it with the cream cheese frosting and enjoy!
Notes
- For a more indulgent version, you can add chocolate chips or a few raspberries to the batter before microwaving.
- Adjust the microwave time based on the wattage of your microwave. If it’s a lower-watt microwave, you may need to add an extra 30 seconds.
