- 2 cups (300g) watermelon, cut into bite-sized pieces
- 2 kiwis, peeled and sliced
- 1 mango, peeled and diced
- 1/2 cup (75g) pomegranate seeds (optional)
For the dressing:
- 1/4 cup (60ml) fresh lime juice
- 2 tablespoons (30ml) honey
- 1 teaspoon vanilla extract
- Zest of 1 lime
Instructions
- Prepare the dressing: In a small bowl, whisk together the lime juice, honey, vanilla extract, and lime zest until the honey is fully dissolved.
- Combine the fruits: In a large mixing bowl, gently combine all the prepared fruits.
- Add the dressing: Pour the dressing over the fruit mixture and toss gently to coat all the pieces evenly.
- Chill and serve: Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld. Serve chilled.
