  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup powdered sugar (for dusting)
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 2 tbsp milk
  • 1/2 cup mini Reese’s peanut butter cups, chopped

Instructions

  • Preheat oven to 375°F (190°C) and line a jelly roll pan (15×10 inches) with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a separate large bowl, beat the eggs and granulated sugar with an electric mixer until light and fluffy, about 3-4 minutes.
  • Stir in the vanilla extract, then gently fold in the dry ingredients until fully incorporated.
  • Spread the batter evenly in the prepared pan, making sure to reach the edges.
  • Bake in the preheated oven for 10-12 minutes, or until the cake is lightly golden and springs back when touched.
  • While the cake is baking, prepare the peanut butter filling. In a bowl, mix together the creamy peanut butter, softened butter, powdered sugar, and milk until smooth and creamy.
  • Once the cake is done, remove it from the oven and let it cool for a few minutes. Dust a clean kitchen towel with powdered sugar.
  • Flip the cake onto the towel, remove the parchment paper, and gently roll it up from the short side.
  • Allow the cake to cool completely in the towel.
  • Once the cake is cool, unroll it and spread the peanut butter filling evenly across the surface.
  • Sprinkle the chopped mini Reese’s peanut butter cups on top of the filling.
  • Roll the cake back up carefully, pressing gently to secure the filling inside.
  • Slice and serve, enjoying the peanut butter and chocolate goodness!

  • Make sure the cake is completely cool before applying the peanut butter filling to prevent it from melting.
