Instructions

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  • In a medium bowl, whisk together the all-purpose flour, baking soda, cocoa powder, and salt. Set aside.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  • Beat in the egg, red food coloring, and vanilla extract, mixing until fully incorporated.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.
  • Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are set and the tops of the cookies slightly crack.
  • Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  • Once the cookies are completely cooled, frost each one generously with cream cheese frosting.
