  • 1 cup buttermilk

Instructions

  • Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  • In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Set aside.
  • In a large bowl, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.
  • Gradually mix in vegetable oil, followed by the eggs, one at a time, making sure each egg is fully incorporated before adding the next.
  • Add buttermilk, vanilla extract, and pink dragon fruit puree to the wet ingredients, mixing until combined. (Optional: add a few drops of pink food coloring to enhance the color.)
  • Gradually mix the dry ingredients into the wet ingredients, alternating with the wet mixture, starting and ending with the dry ingredients. Stir until just combined.
  • Divide the batter evenly between the two prepared cake pans and smooth the tops.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Notes

  • If you want a deeper pink color, add a few more drops of pink food coloring.
