Description

This Greek Honey Cake is a rich and aromatic dessert that brings together the warmth of spices with the natural sweetness of honey.   • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground cloves

  • 1/4 teaspoon ground nutmeg

  • 1/2 teaspoon salt

  • 1/2 cup unsalted butter, softened

  • 1/2 cup sugar

  • 2 large eggs

  • 1/2 cup Greek yogurt (or plain yogurt)

  • 1/2 cup honey (preferably Greek honey)

  • 1/4 cup milk

  • 1 teaspoon vanilla extract

For the Honey Syrup:

  • 1/2 cup honey

  • 1/4 cup water

  • 1/4 cup sugar

  • 1 tablespoon lemon juice

  • 1 cinnamon stick (optional)


Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour a round cake pan (9-inch) or line it with parchment paper.

  • In a medium bowl, whisk together the flour, baking soda, cinnamon, cloves, nutmeg, and salt. Set aside.

  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.

  • Add the eggs one at a time, beating well after each addition. Then stir in the yogurt, honey, milk, and vanilla extract.

  • Gradually add the dry ingredients to the wet ingredients, mixing until fully combined. The batter should be thick and smooth.

  • Pour the batter into the prepared cake pan and spread it evenly.

  • Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

  • While the cake is baking, prepare the honey syrup: In a small saucepan, combine the honey, water, sugar, and lemon juice. Bring to a simmer over medium heat, stirring occasionally until the sugar dissolves. If using, add the cinnamon stick for extra flavor. Let the syrup simmer for 5-7 minutes until it thickens slightly. Remove from heat and discard the cinnamon stick (if used).

  • Once the cake is done baking, remove it from the oven and let it cool in the pan for 10 minutes.

 

  • Pour the warm honey syrup over the warm cake, allowing it to soak in. Let the cake cool completely before serving.

Notes

  • This cake is best when allowed to soak in the honey syrup, as it makes the texture moist and flavorful.

  • For a slightly different twist, you can sprinkle chopped nuts (like walnuts or almonds) on top before serving.
