Instructions
- Preheat the waffle iron: Preheat your waffle iron according to the manufacturer’s instructions and lightly grease it with cooking spray or oil.
- Prepare the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon (if using).
- Make the wet ingredients: In another bowl, whisk the eggs, milk, vegetable oil (or melted butter), and vanilla extract until combined.
- Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix.
- Add the peaches: Gently fold in the chopped peaches, ensuring they are evenly distributed throughout the batter.
- Cook the waffles: Pour the batter into your preheated waffle iron, using about 1/2 cup of batter (or the amount recommended by your waffle iron’s instructions). Cook the waffles until golden brown and crisp, about 3-5 minutes, depending on your waffle iron.
