Description

These Fluffy Peach Waffles are light, airy, and bursting with the sweet flavor of ripe peaches. Perfect for breakfast or brunch, these waffles offer a delightful crunch on the outside with a soft, fluffy interior. Top them with fresh peaches, syrup, or whipped cream for an indulgent treat!

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/4 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 cup fresh peaches, peeled and chopped (or canned peaches, drained)
  • Optional toppings: maple syrup, whipped cream, extra peach slices

Instructions

  • Preheat the waffle iron: Preheat your waffle iron according to the manufacturer’s instructions and lightly grease it with cooking spray or oil.
  • Prepare the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon (if using).
  • Make the wet ingredients: In another bowl, whisk the eggs, milk, vegetable oil (or melted butter), and vanilla extract until combined.
  • Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix.
  • Add the peaches: Gently fold in the chopped peaches, ensuring they are evenly distributed throughout the batter.
  • Cook the waffles: Pour the batter into your preheated waffle iron, using about 1/2 cup of batter (or the amount recommended by your waffle iron’s instructions). Cook the waffles until golden brown and crisp, about 3-5 minutes, depending on your waffle iron.
  • Serve: Carefully remove the waffles from the iron and serve immediately. Top with extra peach slices, syrup, whipped cream, or your favorite toppings.

Notes

  • For added flavor, you can also mix in some chopped pecans or walnuts for a little crunch.
  • If you want a stronger peach flavor, you can also add a bit of peach puree to the batter.
  • You can make the batter ahead of time and refrigerate it overnight for an even quicker breakfast the next morning.
  • If you don’t have fresh peaches, you can substitute with frozen peaches, thawed and chopped.
