For the Danish:

Instructions
- Preheat the oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Make the strawberry filling: In a medium saucepan, combine the chopped strawberries, sugar, and lemon juice. Heat over medium heat, stirring occasionally. Once the strawberries start to release their juice, add the cornstarch (if using) and cook for an additional 3-5 minutes until the mixture thickens. Remove from heat and let cool.
- Prepare the vegan cream cheese filling: In a small bowl, mix together the vegan cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Set aside.
- Assemble the danishes: Roll out the puff pastry sheet on a floured surface. Cut it into 4 equal squares (or more if you prefer smaller portions). Gently score a border around the edge of each square, about 1/2 inch from the edge, using a knife. Be careful not to cut all the way through.
- Add the filling: In the center of each pastry square, spread a small amount of the vegan cream cheese filling, leaving the borders uncovered. Top with the strawberry filling, placing a spoonful of the strawberry mixture in the center of each square.
- Bake the danishes: Bake the danishes in the preheated oven for 15-18 minutes, or until the puff pastry is golden brown and flaky.
- Make the glaze: While the danishes are baking, whisk together the powdered sugar, almond milk, and vanilla extract until smooth. Adjust the consistency if necessary, adding more milk to thin or more sugar to thicken.
- Glaze and serve: Once the danishes have cooled slightly, drizzle with the glaze and serve warm.
