- 2 1/2 cups granulated sugar
- 1/2 cup light corn syrup
- 1/2 cup water
- 1/4 tsp salt
- 2 egg whites
- 1 tsp vanilla extract
- 1/2 cup chopped nuts (optional)
Instructions
- In a saucepan, combine sugar, corn syrup, water, and salt. Cook over medium heat, stirring constantly, until sugar dissolves and mixture comes to a boil.
- Continue boiling, without stirring, until a candy thermometer reads 260°F (hard-ball stage).
- In a mixing bowl, beat egg whites until stiff peaks form. Slowly pour hot sugar mixture into egg whites while beating constantly at high speed.
- Add vanilla extract and continue beating until mixture holds its shape.
- Stir in nuts if desired.
- Drop by spoonfuls onto waxed paper and let cool until set.

- Ensure that you use a candy thermometer to achieve the correct temperature.
- The mixture can harden quickly, so work swiftly when spooning onto waxed paper.
- If you prefer, you can skip the nuts or substitute with your favorite type, such as pecans or walnuts.
