A sweet, light, and airy treat that melts in your mouth, Divinity Candy is made from a simple mixture of sugar, corn syrup, egg whites, and vanilla. It’s a perfect holiday or special occasion candy, with optional chopped nuts for extra texture.


Ingredients

  • 2 1/2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 1/4 tsp salt
  • 2 egg whites
  • 1 tsp vanilla extract
  • 1/2 cup chopped nuts (optional)

Instructions

  • In a saucepan, combine sugar, corn syrup, water, and salt. Cook over medium heat, stirring constantly, until sugar dissolves and mixture comes to a boil.
  • Continue boiling, without stirring, until a candy thermometer reads 260°F (hard-ball stage).
  • In a mixing bowl, beat egg whites until stiff peaks form. Slowly pour hot sugar mixture into egg whites while beating constantly at high speed.
  • Add vanilla extract and continue beating until mixture holds its shape.
  • Stir in nuts if desired.
  • Drop by spoonfuls onto waxed paper and let cool until set.

Notes

  • Ensure that you use a candy thermometer to achieve the correct temperature.
  • The mixture can harden quickly, so work swiftly when spooning onto waxed paper.
  • If you prefer, you can skip the nuts or substitute with your favorite type, such as pecans or walnuts.
