For the Cake:

  • 1 box (15.25 oz) vanilla cake mix (or your favorite white cake mix)
  • 3 large eggs
  • 1 cup water
  • 1/3 cup vegetable oil

For the Poke Filling:

  • 1 (3 oz) box of Jell-O (choose your preferred color/flavor like strawberry, lime, or orange)
  • 1 cup boiling water
  • 1 cup cold water

For the Topping:

 

  • 1 (8 oz) tub of Cool Whip or whipped topping
  • 1/2 cup shredded coconut (optional, for garnish)
  • 1/4 cup mini chocolate eggs (optional, for garnish)
  • Pastel-colored sprinkles (optional, for garnish)

Instructions

  • Bake the Cake:
    Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish. Prepare the cake mix according to the instructions on the box, using the eggs, water, and vegetable oil. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for about 10 minutes.

  • Prepare the Jell-O Filling:
    While the cake is cooling, prepare the Jell-O. In a medium bowl, dissolve the Jell-O mix in 1 cup of boiling water, stirring until fully dissolved. Then add 1 cup of cold water and stir to combine. Set the Jell-O aside to cool slightly.

  • Poke the Cake:
    Once the cake has cooled for about 10 minutes, use the handle of a wooden spoon or a fork to poke holes all over the top of the cake (about 20-30 holes). Make sure to poke deep enough for the Jell-O to seep into the cake, but not all the way through the bottom.

  • Add the Jell-O Filling:
    Slowly pour the prepared Jell-O over the entire cake, ensuring it fills all the holes. Be sure to pour slowly and evenly so the Jell-O seeps into the cake completely. Refrigerate the cake for at least 3 hours, or until the Jell-O is set.

  • Prepare the Topping:
    Once the cake has chilled and the Jell-O is set, spread a layer of Cool Whip or whipped topping over the cake, covering it completely.

  • Garnish the Cake:
    For a festive touch, sprinkle shredded coconut on top for a “grass” effect. Decorate with mini chocolate eggs, pastel sprinkles, or any Easter-themed decorations you prefer.
