Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 4 eggs
  • 1 cup chocolate chips
  • 1 can cherry pie filling

Instructions

  • Preheat oven to 325°F (165°C).
  • Combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  • In a large bowl, beat cream cheese, 1 cup sugar, and vanilla extract until smooth and creamy.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in chocolate chips and pour the mixture over the prepared crust.
  • Bake in preheated oven for 55-60 minutes, or until the center is almost set.
  • Cool the cheesecake on a wire rack for 10 minutes, then run a knife around the edge of the pan to loosen it.
  • Refrigerate for at least 4 hours or overnight.
  • Top with cherry pie filling before serving.

Notes

  • For best results, refrigerate the cheesecake overnight to allow it to firm up properly.
  • You can use fresh cherries as a topping if you prefer instead of canned pie filling.
  • You can also drizzle some melted chocolate over the top for added richness.
