Description

This Cherry Bread with Cherry Glaze is a sweet and fruity treat that’s perfect for any occasion! The soft, moist bread is loaded with fresh or canned cherries, and the cherry glaze on top adds a luscious touch of sweetness. Whether enjoyed as a breakfast or dessert, it’s a delightful way to celebrate the juicy taste of cherries.

Ingredients

Scale

For the Bread:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 1/2 cups fresh or canned cherries, pitted and chopped (reserve a few for garnish, if desired)

For the Cherry Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons cherry juice (from the canned cherries or fresh juice)
  • 1/2 teaspoon vanilla extract
  • Optional: A few chopped cherries for garnish

Instructions

  • Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using).
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the eggs, one at a time, followed by the vanilla extract.
  • Add the dry ingredients to the wet ingredients in batches, alternating with the milk, until just combined.
  • Gently fold in the chopped cherries.
  • Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  • While the bread cools, prepare the cherry glaze. In a small bowl, whisk together powdered sugar, cherry juice, and vanilla extract until smooth.
  • Once the bread has cooled completely, drizzle the cherry glaze over the top.
  • Garnish with a few additional chopped cherries, if desired. Slice and enjoy!

Notes

  • You can use frozen cherries in place of fresh cherries, but be sure to thaw and drain them before adding them to the batter.
  • For a twist, try adding a tablespoon of lemon zest to the batter for a refreshing flavor contrast with the cherries.
  • This bread can be stored at room temperature for a few days or refrigerated for longer shelf life
