- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 1/2 cups fresh or canned cherries, pitted and chopped (reserve a few for garnish, if desired)
For the Cherry Glaze:
- 1 cup powdered sugar
- 2 tablespoons cherry juice (from the canned cherries or fresh juice)
- 1/2 teaspoon vanilla extract
- Optional: A few chopped cherries for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using).
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- Add the dry ingredients to the wet ingredients in batches, alternating with the milk, until just combined.
- Gently fold in the chopped cherries.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
- While the bread cools, prepare the cherry glaze. In a small bowl, whisk together powdered sugar, cherry juice, and vanilla extract until smooth.
- Once the bread has cooled completely, drizzle the cherry glaze over the top.
- Garnish with a few additional chopped cherries, if desired. Slice and enjoy!

- You can use frozen cherries in place of fresh cherries, but be sure to thaw and drain them before adding them to the batter.
