  • 1 cup dried cherries (chopped)
  • ½ cup sliced almonds

Instructions

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  • Beat in the egg and almond extract, mixing until fully incorporated.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until a smooth dough forms.
  • Fold in the chopped dried cherries and sliced almonds.
  • Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Gently press down each cookie with the back of a spoon or your fingers to slightly flatten them.
  • Bake for 10-12 minutes, or until the edges are lightly golden and the cookies are set in the center.
  • Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
