For the Cacao Layer:

  • 1/2 cup dark chocolate (70% cocoa or higher)
  • 2 tablespoons coconut oil
  • 1 tablespoon maple syrup (or honey)
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt (optional)

For the Matcha Layer:

  • 1/2 cup white chocolate or coconut butter (melted)
  • 1 teaspoon matcha powder (ceremonial grade preferred)
  • 1 tablespoon coconut oil
  • 1 tablespoon maple syrup (or honey)
  • Pinch of sea salt (optional)

Instructions

  • Prepare the Molds:
    Line a mini muffin tin or silicone mold with paper liners, or grease it lightly with coconut oil.
  • Make the Cacao Layer:
    In a small bowl, melt the dark chocolate and coconut oil together in the microwave or using a double boiler, stirring until smooth. Add the maple syrup, vanilla extract, and a pinch of sea salt (if using). Stir well to combine.
  • Layer the Cacao Mixture:
    Spoon a small amount of the cacao mixture into the bottom of each muffin cup, about halfway full. Tap the pan lightly on the counter to even out the layers. Place the tray in the fridge or freezer for about 15 minutes to allow the cacao layer to set.
  • Make the Matcha Layer:
    While the cacao layer is setting, melt the white chocolate or coconut butter and coconut oil together in a small bowl. Stir in the matcha powder, maple syrup, and a pinch of sea salt (if using). Mix until smooth and well combined.
  • Layer the Matcha Mixture:
    Once the cacao layer is set, spoon the matcha mixture on top of each cacao layer, filling each cup the rest of the way. Tap the tray again to even out the layers. Refrigerate for another 15-20 minutes, or until completely set.
  • Serve:
    Once fully set, remove the cacao matcha cups from the molds. Serve immediately or store in an airtight container in the fridge for up to 1 week.

Notes

  • These cups are naturally sweetened with maple syrup, but you can adjust the sweetness to your taste by adding more or less.
