- 1 teaspoon baking powder
- 1 1/2 cups fresh or frozen blueberries (reserve some for topping)
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish.
- In a large bowl, whisk together the cottage cheese, eggs, milk, maple syrup (or honey), vanilla extract, cinnamon, and salt.
- Stir in the rolled oats and baking powder.
- Gently fold in the blueberries, reserving some for the topping.
- Pour the mixture into the prepared baking dish and spread it evenly. Top with the reserved blueberries.
- Bake for 30-35 minutes or until the dish is set and lightly golden on top.
- Cool for 5-10 minutes before slicing and serving. Serve warm.
