- ¼ cup pure maple syrup (or substitute with agave or honey)
- 1 teaspoon pure vanilla extract (optional)

Prepare the Bread:
- Cube the bread into small, bite-sized pieces and spread them evenly in a greased 9×13-inch baking dish.

- Scatter the mixed berries over the cubed bread. You can use fresh or frozen berries—just make sure to thaw the frozen ones before using.

- In a large mixing bowl, whisk together the applesauce (or mashed banana), milk, egg whites (or extra milk), maple syrup, and vanilla extract (if using).

Pour Over the Bread and Berries:
- Pour the custard mixture evenly over the bread and berries, making sure to soak all the bread pieces.

- Cover the baking dish with plastic wrap or foil and refrigerate it overnight (or for at least 6 hours) to allow the bread to absorb the custard mixture.

- The next morning, preheat the oven to 350°F (175°C). Remove the casserole from the refrigerator and let it come to room temperature while the oven heats.
