For the Sandwich:
- 2 slices of Bread (sourdough, brioche, or rustic white loaf)
- 2 oz Brie Cheese, sliced
- 2 oz Fresh Mozzarella Cheese, sliced
- 2–3 tbsp Cranberry Sauce (homemade or store-bought)
- 2 tbsp Butter (softened)
Instructions
- Preheat a skillet or griddle over medium heat.
- Spread butter on one side of each slice of bread. This will be the outside of your sandwich for a crispy, golden finish.
- On the unbuttered side of one slice, spread a generous amount of cranberry sauce.
- Layer the brie and mozzarella cheese over the cranberry sauce.
- Place the second slice of bread, buttered side up, on top of the cheese.
- Grill the sandwich in the skillet for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted and gooey.
- Remove the sandwich from the skillet and let it sit for a minute before slicing it in half. Serve warm and enjoy!
Notes
- You can add a little fresh thyme or rosemary for extra flavor if desired.
- For a lighter version, you can use a lower-fat mozzarella cheese or reduce the amount of butter used for grilling.
