Description

This Cranberry Brie and Mozzarella Grilled Sandwich is the ultimate comfort food, combining the creamy richness of brie, the melt-in-your-mouth stretch of mozzarella, and the sweet-tart bite of cranberry sauce—all sandwiched between crispy, buttery bread. It’s a perfect blend of savory and sweet in every bite!

For the Sandwich:

  • 2 slices of Bread (sourdough, brioche, or rustic white loaf)
  • 2 oz Brie Cheese, sliced
  • 2 oz Fresh Mozzarella Cheese, sliced
  • 23 tbsp Cranberry Sauce (homemade or store-bought)
  • 2 tbsp Butter (softened)

Instructions

  • Preheat a skillet or griddle over medium heat.
  • Spread butter on one side of each slice of bread. This will be the outside of your sandwich for a crispy, golden finish.
  • On the unbuttered side of one slice, spread a generous amount of cranberry sauce.
  • Layer the brie and mozzarella cheese over the cranberry sauce.
  • Place the second slice of bread, buttered side up, on top of the cheese.
  • Grill the sandwich in the skillet for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted and gooey.
  • Remove the sandwich from the skillet and let it sit for a minute before slicing it in half. Serve warm and enjoy!

Notes

  • You can add a little fresh thyme or rosemary for extra flavor if desired.
  • For a lighter version, you can use a lower-fat mozzarella cheese or reduce the amount of butter used for grilling.
